Re: green peas. One of my favourite and super-easy recipes comes from Betty Bossi (who else…).
It’s a pasta sauce made by blending frozen peas with some mascarpone (also works with sour cream or crème fraîche), grated parmesan, salt and pepper. Once blended, add a dash of lemon juice and a handful of red pepper flakes for heat, then toss with e.g. penne.
Surprisingly delicious and pretty fun looking!
(my daughter calls it the dinosaur sauce)
